Throw these on a quesadilla, and you’ll be in heaven.
Ingredients
- 2 lbs skirt steak
- olive oil (to coat the steak)
- 2 tbsp soy sauce
- 1 orange (juice and zest)
- 2 limes (juice and zest)
- 6 cloves garlic (crushed)
- 1 handful of cilantro (chopped)
- ⅔ tbsp chili powder
- 1 tbsp garlic powder
- 2 tsp cumin
- 1 heavy pinch oregano
- ⅔ tbsp kosher salt
Instructions
A flame grill is ideal, but a ripping hot flat iron will also work.
- In a bowl, add the skirt steak, and coat with olive oil.
- Add the soy sauce, citrus, garlic, cilantro, and seasonings, and mix together to fully coat the steak.
- Marinate in the refrigerator for >1 hour.
- Add the steaks to the grill, and allow each side to get some char marks ($~$5 minutes on each side).
- Remove the steaks from the grill and let rest for >5 minutes.
- Cut the steaks against the grain, and serve.
