A classic enjoyed during harvest. Apparently the only thing little Boss included in his cookbook for Great Gran.

Ingredients

  • 4 round steaks
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • ½ onion (chopped)
  • 1 can stewed tomatoes
  • 1–2 cloves garlic (minced)
  • 1 can cream of mushroom soup
  • beef broth (or water)
  • flour with favorite seasonings

Instructions

Preheat the oven to 350°F.

  1. Coat the steaks evenly with the seasoned flour.
  2. Add the steaks to a ripping hot pan and brown on each side in olive oil (about 5 minute each side).
  3. Place in a Pyrex® dish.
  4. Mix the fresh vegetables together and pour over the steaks.
  5. Stir tomatoes and soup together and pour on steaks/veggies.
  6. Add a little water or beef broth.
  7. Cover with foil and bake about for about and hour.
  8. Note: Boss likes to brown the steak in a cast iron skillet then transfer it to the oven.
