These are a favorite from school cafeterias in the 70s–80s Created by a cafeteria worker named Emaline Anderson in Wichita Falls, TX.

Ingredients

Dough

  • 4 cups flour
  • 4 tbsp shortening
  • 1 tsp salt
  • 4 tbsp sugar
  • 1½–2 cups hot water
  • 3 (¼ oz) packages Quick Rise Yeast

Meat

  • 1–1½ lbs ground beef
  • ½ onion (chopped)
  • ¼ cup mustard
  • ½ cup mayonnaise
  • 1 cup cheese (American, velveeta, etc., NOT cheddar)
  • salt and black pepper (to taste)

Instructions

Preheat the oven to 350°F.

Dough

  1. Mix four, salt, sugar, and yeast. Mix well.
  2. Add shortening and mix until crumbly.
  3. Add hot water a little at a time until a soft ball forms.
  4. While the dough is rising, make the meat mixture.

Burgers

  1. Brown meat over medium-high heat and drain.
  2. Add remaining ingredients and mix well.
  3. Roll dough into balls on lightly floured surface.
  4. Flatten dough (not too thin).
  5. Place ~⅓ cup of the meat in the middle of each flattened ball.
  6. Bring the dough up around the meat and pinch together.
  7. Turn over and flatten with hand.
  8. Place on an un-creased cookie sheet and bake until golden brown (about 12 minutes).
